vegan peanut butter cups

Wanted to share one of my favorite recipes from The Kind Diet. These get requested a lot around my household and when I make them, I generally allow myself to eat only one from each batch. It’s a challenge because they are sooooo sooooo good. But because they are super rich they really a better occasional indulgence. I eat them sloooow. One little crumbly bite every 5-10 minutes. Cuz I’m weird like that.

I’m eating mine today, with an almond milk chai latte while I study for Wednesday’s midterm and the dogs sleep at my feet. Makes homework a little less painful (the cute workspace helps, too! We do what we can..)

Vegan Chocolate Peanut Butter Cups

Servings:
12

Ingredients:

  • 1/2 cup Earth Balancebutter
  • 3/4 cup crunchy peanut butter (preferably unsweetened and unsalted)
  • 3/4 cup graham cracker crumbs or 10 graham cracker squares
  • 1/4 cup maple sugar or other granulated sweetener
  • 1 cup grain-sweetened, nondairy chocolate or carob chips
  • 1/4 cup soy, rice, or nut milk
  • 1/4 cup chopped pecans, almonds, or peanuts

Directions:

  1. Line a 12-cup muffin tin with paper liners. Set aside.
  2. Melt the butter in a small saucepan over medium heat.
  3. Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well.
  4. Remove the mixture from the heat. Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
  5. Combine the chocolate and milk in another pan. Stir over medium heat until the chocolate has melted.
  6. Spoon the chocolate evenly over the peanut butter mixture.
  7. Top with chopped nuts.
  8. Place in the refrigerator to set for at least 2 hours before serving.

stuff i heart sunday – vol. 4: morrocan-inspired style

Even though I just dedicated a large chunk of my day to the Scandinavian mecca that is IKEA, my heart’s in another land. (: Totally love and am inspired by different “global” looks, particularly Moroccan. ♥ Woods stained with different saturated jewel tones, mixed patterns, lots of textures, and I’d imagine a spicy/herbal aroma… sounds like heaven to me! Anyone incorporating this look into their spaces?

stuff 1 heart sunday – vol. 3: office supplies

Since I’m starting another class tomorrow, I thought it was a good time for a post honoring one of my favorite guilty pleasures – office supplies! I am such a sucker for little notebooks, colorful pens, paper organizing systems, planners/calendars/to-do lists… I love them! When I cleaned out my office closet a couple months ago, I discovered about 30 little notepads {which are now all in one place so I don’t feel like I need to buy more any time soon, but I will want to!}. My all-time favorite thing is a new Sharpie. I love to doodle on everything. I even made our Halloween photo booth by doodling with a GIANT SHARPIE. They are classic and work on everything.

My other obsession is my day planner. I’ve been carrying the same red Franklin Covey planner for about 4 years. I love it. It’s fat with info, coupons, notes, doodles, lists, calendar, post-it reminders, etc. I write my resolutions/goals, keep track of what I buy and what I want to buy, and make lists of everything and keep it all in that book. I am terrified of losing it so it’s always in my purse which means my purse weights 15lbs and any that I buy have a size requirement to fit my day planner.

stuff i heart sunday – vol. 1: braids

Thought I’d start doing a weekly post on what I’m diggin, what I’m Google-searching, and what I’m hacking at home. This week it’s BRAIDS. ♥ I love how effortless but eye-catching braids look.

Those front-braids are so pretty and I’m trying to learn how to do it myself but I need about 4 more hands. I can, however, braid some leather and make a cute bracelet, and enjoy the inspiration. If I can accomplish the front braid I will be sure to post. Those YouTube tutorials make me feel stabby or else that’d probably do the trick.
