This is a recipe for Katie. I essentially made up my own to taste, and it’s a favorite healthy meal of mine. 100% vegan, lots of protein, and even though there are quite a few ingredients, you can use a combination of what you have on-hand, veggie-wise, and pantry staples.
SPICY THAI PEANUT NOODLES

INGREDIENTS:
- Whole wheat linguine noodles {or any other kind of flatter noodle}
- 1/2 head broccoli, broken into florets and blanched
- 1/2 lb. sprouted mixed beans {not bean sprouts, though they would be a delicious addition – I am talking about the variety of chickpeas and other beans that are sprouting. I find them in my local health foods store produce section. They are awesome!}
- 1/4 head of cabbage
- Green onions (about 3, chopped into long (maybe 2-inch) pieces
- 1-2 cloves of garlic, crushed
- Sesame oil
- 1/4 c. crushed peanuts
- A handful of cilantro
- 1 lime
For the Sauce:
- 2/3 c.peanut butter
- 1/4 c. soy sauce
- 1 -2 tsp. garlic chili paste
- 1/2 tsp. ginger
DIRECTIONS:
- Cook noodles to package directions. Drain and put in a large mixing bowl.
- Meanwhile, mix the sauce ingredients in a sauce pan and mix. If it’s very thick, add a bit of water 1 tsp. at a time.
- Saute the garlic, broccoli, cabbage, and beans in some sesame oil. Put in bowl with noodles. Mix in the sauce {you may not need all of it.
- Mix in chopped peanuts and green onions. Put on plates and garnish with cilantro and sliced limes. Squeeze lime juice on your portion before eating. YUMMY!
Note: lots of veggies would be good in this. I just listed my fav version. Also, the sauce keeps well for weeks. So you could try this a week later with different stuff!
