pumpkin soup // recipe of the week

I am not sure where I first found this easy recipe- I’m thinking one of the fitness magazines, like Shape or Self? Anyway… it’s SO easy and SO good. I’ll be eating this every day all week.

Pumpkin Soup

INGREDIENTS:

  • 1 29 oz can pureed pumpkin
  • 4 cups vegetable stock
  • 1 1/2 c. orange juice
  • 1/4 tsp. salt
  • 1 tsp. black pepper

DIRECTIONS:

  1. Heat up vegetable stock in a pan.
  2. Stir in pumpkin with a whisk until smooth.
  3. Stir in orange juice and spices until heated through.
  4. Serve and save the rest for future lunches. Freeze the leftovers in a freezer container.
