I am not sure where I first found this easy recipe- I’m thinking one of the fitness magazines, like Shape or Self? Anyway… it’s SO easy and SO good. I’ll be eating this every day all week.

Pumpkin Soup
INGREDIENTS:
- 1 29 oz can pureed pumpkin
- 4 cups vegetable stock
- 1 1/2 c. orange juice
- 1/4 tsp. salt
- 1 tsp. black pepper
DIRECTIONS:
- Heat up vegetable stock in a pan.
- Stir in pumpkin with a whisk until smooth.
- Stir in orange juice and spices until heated through.
- Serve and save the rest for future lunches. Freeze the leftovers in a freezer container.
