stuffed peppers / recipe of the week

I decided to make a goal to try a new recipe each week and post about it here. I’m getting bored of the same few staple recipes and need a few more in rotation. If the recipe sucks, I might post about it anyway, but I promise I won’t lie to you and tell you it’s delicious. :p

STUFFED BELL PEPPERS (makes 4)

INGREDIENTS

  • 1/2 pound ground turkey burger
  • 1 cup minute rice cooked to directions on package
  • 1 1/4 cup water
  • 4 green bell peppers {I only made 3 because I was short one pepper on hand}
  • 1/4 cup chopped onion
  • 1 stalk finely chopped celery
  • 1 (8 ounce) can tomato sauce
  • 1 (14 oz) can stewed tomatoes
  • 1/2 tablespoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated cheddar cheese to top
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Remove and discard the tops, seeds, and membranes of the bell peppers. Bring a pot of water to a low boil. Lower peppers into boiling water for about 1 minute. Remove and arrange peppers on a backing dish with the hollowed sides facing up.
  3. In a skillet over medium heat, cook the turkey burger until evenly browned. Add Italian seasoning and chopped onion and celery and saute until vegetables are tender.
  4. In a bowl, mix the turkey burger, cooked rice, 1/2 can tomato sauce, stewed tomatoes, Worcestershire sauce, garlic powder,  salt, and pepper. Spoon an equal amount of the mixture into each pepper. Pour the remaining tomato sauce over the stuffed peppers.
  5. Bake uncovered one hour. Sprinkle with cheddar cheese during the last ten minutes of baking, then bake for remaining 10 minutes.

  1. I love stuffed peppers. Try putting it in a crockpot, and letting them simmer all day. it makes everything just fall apart.

    1. that’s a great idea, what can’t a crock pot do? if they did my dishes i would leave my husband for one tonight. :p
